Chocolate Salami Recipe
Ingredients:
- 200 grams (about 7 oz) of digestive biscuits or plain cookies, broken into small pieces
- 100 grams (about 3.5 oz) of unsalted butter
- 100 grams (about 3.5 oz) of dark chocolate, chopped
- 100 grams (about 3.5 oz) of sugar
- 1 large egg
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- 1/4 cup chopped nuts (such as almonds, hazelnuts, or walnuts)
- 1/4 cup raisins or dried cranberries (optional)
- Powdered sugar or finely chopped nuts for coating
Instructions:
- Prepare the Chocolate Mixture:
- In a heatproof bowl, melt the butter and dark chocolate together over a pot of simmering water (double boiler method). Stir until smooth.
- Remove the bowl from heat and let it cool slightly.
- Add the sugar and cocoa powder to the melted chocolate mixture and stir until combined.
- Beat the egg and add it to the mixture, stirring quickly to incorporate.
- Stir in the vanilla extract.
- Combine the Ingredients:
- In a large bowl, combine the broken biscuits, chopped nuts, and dried fruits (if using).
- Pour the chocolate mixture over the biscuit mixture and stir until everything is well coated.
- Shape the Salami:
- Lay out a large piece of plastic wrap or parchment paper on a flat surface.
- Spoon the mixture onto the plastic wrap and shape it into a log, about 10-12 inches long.
- Wrap the log tightly in the plastic wrap, twisting the ends to seal.
- Refrigerate the log for at least 2-3 hours or until firm.
- Coat and Serve:
- Once the chocolate salami is firm, remove it from the refrigerator and unwrap it.
- Roll the log in powdered sugar or finely chopped nuts to coat the outside.
- Slice the chocolate salami into 1/2-inch thick slices and serve.
