Classic Baked Cheesecake

 

Ingredients:

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup (240ml) sour cream
  • 1/4 cup (30g) all-purpose flour

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (163°C).
  2. Prepare the Crust:
    • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes, then remove from oven and let cool.
  3. Make the Filling:
    • In a large mixing bowl, beat the cream cheese until smooth.
    • Add the sugar and vanilla extract, and beat until combined.
    • Add the eggs one at a time, mixing well after each addition.
    • Mix in the sour cream and flour until smooth and fully incorporated.
  4. Assemble and Bake:
    • Pour the cream cheese mixture over the cooled crust, spreading evenly.
    • Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.
  5. Chill and Serve:
    • Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
    • Before serving, run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan.
    • Slice and serve plain or with your favorite toppings such as fruit compote or whipped cream.
