Classic Pecan Pie Recipe

 

Ingredients:

  • For the Pie Crust:
    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup (1 stick) unsalted butter, chilled and cut into small cubes
    • 2 to 4 tablespoons ice water
  • For the Pecan Pie Filling:
    • 1 cup light corn syrup
    • 1 cup packed brown sugar
    • 1/2 cup unsalted butter, melted
    • 3 large eggs, lightly beaten
    • 1 tablespoon vanilla extract
    • 1/4 teaspoon salt
    • 1 1/2 cups pecan halves

Instructions:

  1. Prepare the Pie Crust:
    • In a large mixing bowl, combine the flour and salt.
    • Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing just until the dough comes together.
    • Gather the dough into a ball, flatten it into a disk, and wrap it in plastic wrap.
    • Refrigerate the dough for at least 30 minutes before rolling it out.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  3. Roll Out the Pie Crust:
    • On a lightly floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie pan.
    • Carefully transfer the dough to the pie pan, gently pressing it into the bottom and sides.
    • Trim any excess dough and crimp the edges to form a decorative border.
    • Set the pie crust aside.
  4. Prepare the Pecan Pie Filling:
    • In a large mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth and well combined.
    • Stir in the pecan halves until they are evenly coated.
  5. Assemble the Pie:
    • Pour the pecan pie filling into the prepared pie crust.
    • Arrange some of the pecan halves on top in a decorative pattern if desired.
  6. Bake the Pie:
    • Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 50 to 60 minutes, or until the filling is set and the crust is golden brown.
    • To check for doneness, the pie should be slightly jiggly in the center but not runny.
  7. Cool and Serve:
    • Remove the pie from the oven and let it cool completely on a wire rack.
    • Once cooled, slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.

Tips:

  • If the edges of the pie crust start to brown too quickly, you can cover them with strips of aluminum foil to prevent burning.
  • For added flavor, try toasting the pecans before adding them to the filling.
