Ingredients

3–4 lb chuck roast
2 tablespoons olive oil
1 large onion, sliced
4 cloves garlic, minced
3 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 lbs baby potatoes
5 large carrots, cut into thick pieces
2 tablespoons butter
2 tablespoons all-purpose flour
Fresh parsley or thyme, for garnish

Preparation

1. Prepare the Roast

Remove the beef from the refrigerator about 20–30 minutes before cooking. Pat it dry with paper towels, then season generously on all sides with salt, black pepper, paprika, thyme, and rosemary.

2. Sear the Beef

Heat the olive oil in a large Dutch oven or heavy oven-safe pot over medium-high heat. Add the roast and sear for about 4–5 minutes on each side until a deep brown crust develops. Remove the roast and set it aside.

3. Build the Flavor

Reduce the heat to medium. Add the sliced onion to the same pot and cook for about 4 minutes until softened. Stir in the garlic and tomato paste and cook for another minute.

4. Slow-Cook the Pot Roast

Transfer the cooked roast and vegetables to a serving platter and keep warm.

Melt the butter in a saucepan and stir in the flour. Cook for about 1 minute, then gradually whisk in 2 cups of the flavorful cooking liquid from the roast.

Simmer gently for 3–5 minutes, stirring frequently, until the gravy becomes smooth and rich. Taste and adjust the salt and pepper if necessary.

7. Serve

Place the tender pot roast in the center of a large serving dish and arrange the roasted potatoes and carrots around it. Spoon some of the warm gravy over the beef and finish with fresh parsley or thyme.
