Creamy Shrimp and Tortellini Pasta Recipe

 

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 package (9 oz/250g) cheese tortellini
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Cook the Tortellini:
    • Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Drain and set aside.
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook until they are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
    • Pour in the white wine (if using) and chicken broth, and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
    • Stir in the heavy cream and bring to a gentle simmer. Cook for 3-4 minutes until the sauce thickens slightly.
    • Add the grated Parmesan cheese, lemon juice, and lemon zest. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  4. Combine Everything:
    • Add the cooked tortellini and shrimp to the skillet, tossing to coat them in the creamy sauce.
    • Cook for another 2-3 minutes until everything is heated through.
  5. Serve:
    • Garnish with chopped fresh parsley, if desired.
    • Serve the creamy shrimp and tortellini pasta immediately.
