Crispy Baked Zucchini Fries

 

Ingredients:

  • 2 large zucchinis
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko works great for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Olive oil spray or cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Zucchini:
    • Wash and dry the zucchinis.
    • Cut the zucchinis into thin slices, about 1/4-inch thick.
  3. Set Up Breading Station:
    • In one shallow dish, place the flour.
    • In a second shallow dish, beat the eggs.
    • In a third shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  4. Bread the Zucchini Slices:
    • Dredge each zucchini slice in flour, shaking off any excess.
    • Dip the floured slice into the beaten eggs, coating it completely.
    • Finally, coat the slice in the breadcrumb mixture, pressing lightly to adhere the crumbs.
  5. Bake the Zucchini Fries:
    • Arrange the breaded zucchini slices in a single layer on the prepared baking sheet.
    • Lightly spray the tops with olive oil or cooking spray.
    • Bake in the preheated oven for 20-25 minutes, or until the zucchini fries are golden brown and crispy, turning them halfway through the baking time.
  6. Serve:
    • Serve the crispy baked zucchini fries hot, with your favorite dipping sauce.
