Fresh Chopped Vegetable Salad
Ingredients:
- 2 cups cherry tomatoes, quartered
- 1 large cucumber, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Prepare Vegetables:
- Wash all the vegetables thoroughly.
- Quarter the cherry tomatoes.
- Dice the cucumber, red bell pepper, green bell pepper, and red onion into small, uniform pieces.
- Mix Vegetables:
- In a large mixing bowl, combine the quartered cherry tomatoes, diced cucumber, red bell pepper, green bell pepper, and red onion.
- Add the chopped fresh cilantro and parsley.
- Prepare Dressing:
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, garlic powder, salt, and pepper.
