Fresh Chopped Vegetable Salad

 

Ingredients:

  • 2 cups cherry tomatoes, quartered
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Prepare Vegetables:
    • Wash all the vegetables thoroughly.
    • Quarter the cherry tomatoes.
    • Dice the cucumber, red bell pepper, green bell pepper, and red onion into small, uniform pieces.
  2. Mix Vegetables:
    • In a large mixing bowl, combine the quartered cherry tomatoes, diced cucumber, red bell pepper, green bell pepper, and red onion.
    • Add the chopped fresh cilantro and parsley.
  3. Prepare Dressing:
    • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, garlic powder, salt, and pepper.
  4. Combine and Toss:
    • Pour the dressing over the mixed vegetables.
    • Toss the salad gently until all the vegetables are well coated with the dressing.
  5. Serve:
    • Transfer the salad to a serving dish or individual jars for a beautiful presentation.
    • Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
