GARLIC BUTTER SAUSAGE WITH LEMON GREEN BEANS
INGREDIENTS:
1 pound (450 g) sausage (bratwurst or Italian style)
1 pound (450 g) fresh green beans, cleaned
3 tablespoons butter, divided,
5 garlic cloves, minced
1 teaspoon Italian seasoning
Juice of half a lemon + lemon slices for garnish
Salt and freshly ground pepper
1/4 cup (60 ml) vegetable or meat broth
1 tablespoon hot sauce, optional (we used Sriracha)
Crushed red chili flakes, optional
1/2 cup chopped fresh parsley
1 tablespoon fresh thyme leaves
PREPARATION:
1. Place green beans on a microwave-safe plate with 1/2 cup (125 ml) of water. Cook, covered, in the microwave for 8 to 10 minutes, until almost cooked through but still crispy.
2. Meanwhile, place the sausages in a pot with 1/2 cup water.Cook half covered over medium heat for 10 minutes, turning regularly. When the water has evaporated, add 2 tablespoons butter, half the garlic and the red chili flakes and continue to cook for a few minutes until the sausages are browned in the garlic butter sauce. Transfer sausages to a plate and set aside.
3. In the same pan, reduce the heat and melt the remaining tablespoon of butter.Add chopped parsley, thyme, remaining garlic, Italian seasoning, crushed red chile flakes, and precooked green beans and cook, stirring regularly, until cooked to your liking, 4 to 5 minutes. Deglaze with lemon juice, vegetable or beef broth and hot sauce and let the sauce simmer for a few minutes.
4. Add the garlic butter sausages back to the pan and reheat briefly. Season with pepper and serve immediately, garnished with more crushed chilli, fresh herbs and a lemon wedge if desired.Enjoy!
