Healthy Oatmeal Cookies

 

Ingredients:

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup raisins or chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt.
  3. Prepare the Wet Ingredients:
    • In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, vanilla extract, and unsweetened applesauce until well combined.
  4. Combine Ingredients:
    • Add the wet ingredients to the dry ingredients and stir until just combined. If desired, fold in the raisins or chocolate chips and chopped nuts.
  5. Scoop the Dough:
    • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake the Cookies:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  7. Cool the Cookies:
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • For chewier cookies, do not overbake them.
  • You can store the cookies in an airtight container at room temperature for up to 5 days.
