Homemade Dream Pecan Pie Cheesecake

Ingredients:

For the topping:
1 and 1/2 cups of crushed graham crackers
1/4 cup of brown sugar
1/2 cup of unsalted butter, melted
For the filling:
4 packages (8 oz each) cumin cheese, softened
1 cup granulated sugar
1 cup heavy cream
1 teaspoon vanilla extract
4 large eggs
For the pecan topping:
1 cup brown sugar
1/2 cup butter
1/2 cup heavy cream
1 and 1/2 cups walnuts, chopped
Makes:

For the frosting:
Mix graham crackers, brown sugar, and melted butter until well combined.
Press mixture into bottom of 9-inch pan.
Bake at 325°F for 10 minutes and let cool.
For the filling:
Beat the cream cheese and powdered sugar until smooth.
Mix the cream and vanilla. Add the eggs, one at a time, and beat until combined.
Pour over crust and bake at 325°F for 60 minutes.
Turn off the oven, leave the door slightly ajar and let the cheesecake cool in the oven for 1 hour.
For the walnut coating:
Combine brown sugar, butter and cream in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is smooth.
Stir in the walnuts and cook for 2-3 minutes.
Pour the cooled cheese on top and leave it in the refrigerator for at least 4 hours.
Preparation time: 30 minutes Cooking time: 70 minutes Total time: 5 hours
