Honey Garlic Chicken & Potatoes 

Juicy chicken, golden potatoes, and colorful vegetables come together in a sweet and savory honey garlic glaze. This easy one-pan dinner is full of flavor and perfect for a comforting family meal.
Ingredients
1½ lbs boneless, skinless chicken breasts, cut into chunks
1½ lbs baby potatoes, halved or quartered
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small red onion, chopped
3 tablespoons olive oil
3 cloves garlic, minced
¼ cup honey
3 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon salt
2 green onions, chopped
Preparation Steps
Preheat the oven to 425°F (220°C). Lightly grease a large baking dish or sheet pan.
Place the potatoes in the pan, drizzle with 1 tablespoon olive oil, and season with a little salt and pepper. Roast for 15 minutes to give them a head start.
In a small bowl, whisk together the honey, soy sauce, garlic, apple cider vinegar, smoked paprika, and remaining olive oil.
Add the chicken, bell peppers, and red onion to the partially roasted potatoes. Pour the honey garlic mixture over everything and toss gently until evenly coated.

Spread everything into an even layer. Bake for another 20–25 minutes, stirring once halfway through, until the chicken is fully cooked and the potatoes are tender.
For deeper caramelization, broil for 2–3 minutes at the end, watching carefully so the glaze does not burn.
Sprinkle with chopped green onions and serve hot with the flavorful pan juices spooned over the top.
