Lemon Garlic Shrimp Oil
Ingredients:
1/3 cup oil, (sliced)
4 cloves garlic, (frozen (or 1 tablespoon))
800 g prawns (or prawns), (peeled and deveined, tail intact )
Kosher salt and freshly ground black pepper, (to taste)
Juice of half a lemon ((about 2 tablespoons – add more if desired))
2 tablespoons water
Chopped parsley, (to garnish)
Directions:
2 tablespoons Melt the butter in the pan. a large skillet over medium heat. Add garlic and cook until fragrant (1 minute).
Season with salt, pepper and black pepper. Cook for 2 minutes on each side, stirring occasionally. Remove the lid and cook on the other side for 2 minutes, until it begins to brown.
Add remaining oil, lemon juice and water. Cook, stirring, until the oil melts and the shrimps are cooked (do not overcook). Remove from heat. Taste and add lemon juice, salt or black pepper if necessary, according to your taste.
Add chopped parsley and serve with rice or pasta.
