NO BAKE COOKIE CAKE
o-Bake Cookie Cake takes the classic no-bake cookie and turns it into a cake.
My son’s birthday was last month. When I asked her what she wanted for dessert for her birthday, she said she wanted a no-bake cookie cake.
I wasn’t sure what he meant exactly, so I asked him a few questions.
She said she wanted me to take my no-bake cookie recipe and turn it into a cake.I made a bar using my no-bake cookie bar recipe using no-bake cookies, but wasn’t sure how it would work as a cake. I had never seen this become a cake recipe, but I was willing to give it a try.
My daughter has a peanut allergy, so I used my peanut butter-free no-bake cookie recipe instead of the classic no-bake cookie recipe.
INGREDIENTS
2 cups sugar
1 cup butter
½ cup milk
4 tablespoons cocoa
1 teaspoon vanilla extract
3 cups rolled oats (for the gluten-free version, use gluten-free rolled oats)
3/4 cup chocolate chips

INSTRUCTIONS
First four ingredients bring to a boil.
Cook for 1 minute.Add vanilla, oats, and chocolate chips and stir until well combined and chocolate chips are melted.
Pour into a round cake tin. A 9- or 10-inch pan works great. (If serving on a plate or cake stand, line the pan with parchment paper to make it easier to remove from the pan.)
Refrigerate until firm.Cut into pieces and serve.
These can be stored in the refrigerator for several days.
