Salted Watermelon and Feta Salad
Ingredients:
- 4 cups watermelon, cut into cubes or wedges
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1 small red onion, thinly sliced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt (preferably flaky sea salt) and freshly ground black pepper, to taste
Instructions:
- Prepare the Watermelon: Cut the watermelon into cubes or wedges, removing the seeds if necessary. Place the watermelon pieces in a large bowl.
- Add Feta and Herbs: Add the crumbled feta cheese, chopped mint, and chopped basil to the bowl with the watermelon.
- Prepare the Onion: Thinly slice the red onion and add it to the bowl.
- Make the Dressing: In a small bowl, whisk together the olive oil and balsamic vinegar until well combined.
- Combine and Season: Drizzle the dressing over the watermelon mixture. Gently toss everything together until well combined. Season with salt and freshly ground black pepper to taste.
