Scallion Pancakes
Ingredients:
- 2 cups all-purpose flour
- 1 cup boiling water
- Oil (vegetable or sesame oil)
- Salt, to taste
- 1 bunch green onions, finely chopped
- Additional options: minced garlic, sesame seeds, or other herbs for flavor
Instructions:
1. Make the Dough:
- Place the flour in a mixing bowl and slowly add the boiling water, stirring with a spoon until you have a rough dough. Let it cool for a few minutes.
- Knead the dough on a floured surface until it’s smooth, about 5 minutes. If the dough is too sticky, add a little more flour.
- Cover the dough with a damp cloth and let it rest for about 30 minutes.
2. Prepare the Scallions:
- While the dough is resting, chop the green onions finely.
3. Shape the Pancakes:
- Divide the dough into 4 equal parts. Roll each part into a ball.
- Take one ball of dough and roll it into a thin circle about 8 inches in diameter.
- Brush the top of the dough circle lightly with oil, sprinkle with salt, and then distribute a generous amount of green onions.
- Roll the dough circle into a log, then coil the log into a round dough ball.
- Flatten the coiled dough ball into a disc, taking care to keep as much of the green onions inside the dough as possible.
4. Cook the Pancakes:
- Heat a tablespoon of oil in a non-stick skillet over medium heat.
- Place one pancake in the skillet, and cook for about 2 to 3 minutes on each side, or until golden brown and crispy.
- Repeat with the remaining pancakes, adding more oil as needed.
5. Serve:
- Serve the pancakes hot, cut into wedges if desired. They can be enjoyed on their own or with a dipping sauce such as soy sauce mixed with a little sesame oil and a splash of vinegar.
