Spicy Sesame Cucumber Salad
Ingredients:
- 2 large cucumbers (English or Persian cucumbers work best)
- 1 small carrot, julienned or grated
- 1 teaspoon salt (for salting cucumbers)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon chili oil (adjust based on spice preference)
- 1 teaspoon sugar or honey
- 1 teaspoon minced garlic
- 1 tablespoon toasted sesame seeds
- Optional: chopped fresh cilantro or green onions for garnish
Instructions:
- Prepare the Cucumbers:
- Thinly slice the cucumbers using a knife or mandoline.
- Place the cucumber slices in a colander, sprinkle with salt, and toss to coat. Let sit for 10–15 minutes to draw out excess water.
- Rinse the cucumbers under cold water and pat them dry with a clean towel.
- Mix the Vegetables:
- In a large bowl, combine the prepared cucumbers and julienned or grated carrots.
- Make the Dressing:
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil, sugar (or honey), and minced garlic until well combined.
- Toss the Salad:
- Pour the dressing over the cucumbers and carrots.
- Add toasted sesame seeds and toss everything together until evenly coated.
- Chill and Serve:
- Let the salad sit in the refrigerator for 10–15 minutes to allow the flavors to meld.
- Garnish with additional sesame seeds, chopped cilantro, or green onions before serving.
