Spicy Sesame Cucumber Salad

 

 

 

Ingredients:

  • 2 large cucumbers (English or Persian cucumbers work best)
  • 1 small carrot, julienned or grated
  • 1 teaspoon salt (for salting cucumbers)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon chili oil (adjust based on spice preference)
  • 1 teaspoon sugar or honey
  • 1 teaspoon minced garlic
  • 1 tablespoon toasted sesame seeds
  • Optional: chopped fresh cilantro or green onions for garnish

Instructions:

  1. Prepare the Cucumbers:
    • Thinly slice the cucumbers using a knife or mandoline.
    • Place the cucumber slices in a colander, sprinkle with salt, and toss to coat. Let sit for 10–15 minutes to draw out excess water.
    • Rinse the cucumbers under cold water and pat them dry with a clean towel.
  2. Mix the Vegetables:
    • In a large bowl, combine the prepared cucumbers and julienned or grated carrots.
  3. Make the Dressing:
    • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil, sugar (or honey), and minced garlic until well combined.
  4. Toss the Salad:
    • Pour the dressing over the cucumbers and carrots.
    • Add toasted sesame seeds and toss everything together until evenly coated.
  5. Chill and Serve:
    • Let the salad sit in the refrigerator for 10–15 minutes to allow the flavors to meld.
    • Garnish with additional sesame seeds, chopped cilantro, or green onions before serving.
