Sweet Potato Pie Recipe

 

Ingredients:

  • For the Crust:
    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup cold unsalted butter, cut into small pieces
    • 3-4 tablespoons ice water
  • For the Filling:
    • 2 cups mashed cooked sweet potatoes (about 2 large sweet potatoes)
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 1/2 cup unsalted butter, melted
    • 2 large eggs
    • 1/2 cup evaporated milk
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon salt

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, whisk together the flour and salt.
    • Add the cold butter pieces and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
    • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Pre-bake the Crust:
    • Preheat the oven to 375°F (190°C).
    • On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter.
    • Transfer the dough to a 9-inch pie dish, trimming any excess dough and crimping the edges as desired.
    • Line the crust with parchment paper and fill with pie weights or dried beans.
    • Bake for 15 minutes, then remove the parchment paper and weights, and bake for an additional 5 minutes or until the crust is lightly golden. Let cool slightly.
  3. Prepare the Filling:
    • In a large bowl, beat the mashed sweet potatoes with the granulated sugar and brown sugar until smooth.
    • Add the melted butter and mix well.
    • Beat in the eggs one at a time until fully incorporated.
    • Add the evaporated milk, vanilla extract, cinnamon, nutmeg, ginger, and salt, and mix until smooth.
  4. Assemble and Bake the Pie:
    • Pour the sweet potato filling into the pre-baked crust, spreading it evenly.
    • Bake in the preheated oven for 45-50 minutes, or until a knife inserted into the center comes out clean and the filling is set.
    • Allow the pie to cool completely on a wire rack before serving.
  5. Serve:
    • Slice the pie and serve it with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
