Ingredients

For the Croquettes:

  • 2 cups cooked ham, finely chopped
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup green onions, finely sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 cup milk
  • Salt and pepper, to taste
  • 1/2 teaspoon nutmeg (optional)

For Breading and Frying:

  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • Oil for frying

Instructions

Making the Filling:

  1. Make a roux: In a saucepan over medium heat, melt the butter. Add 2 tablespoons of flour and stir for about 2 minutes.
  2. Add milk: Slowly whisk in the milk, ensuring there are no lumps. Cook until the mixture thickens into a sauce.
  3. Combine ingredients: Remove from heat and stir in the chopped ham, mozzarella cheese, and green onions. Season with salt, pepper, and nutmeg. Mix until well combined.
  4. Cool the mixture: Transfer the mixture to a bowl and let it cool in the fridge for at least an hour, or until firm enough to shape.

Shaping and Frying:

  1. Shape the croquettes: Once cooled, take spoonfuls of the mixture and shape into small balls or cylinders.
  2. Dredge in flour: Roll each croquette in flour, then dip into beaten eggs, and finally coat with breadcrumbs.
  3. Fry the croquettes: Heat oil in a deep fryer or large pan to 350°F (175°C). Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes.
  4. Drain: Remove from oil and drain on paper towels.

Serve these cheesy ham croquettes hot with a side of lime wedges or your favorite dipping sauce. They make for a delightful snack or appetizer!
