Purple Velvet Cake Recipe
Made this today and it was heavenly! My husband ate 4 slices!
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon fine salt

1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tablespoons (1 ounce) purple food coloring

1 teaspoon distilled white vinegar
1 teaspoon vanilla extract
Cream cheese frosting (homemade or store-bought). )

Directions: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line them with parchment.Mix dry ingredients: Whisk together flour, sugar, baking powder, salt and cocoa powder in a large bowl.

Mix wet ingredients: In another bowl, stir together oil, buttermilk, eggs, food coloring, vinegar and vanilla until well combined.
Combine: Gradually mix the wet ingredients into the dry ones and stir until smooth.
Baking: Divide the dough between the tins and bake for about 30 minutes. Transfer to molds and then let cool on a rack.Frost: Once cooled, top with cream cheese frosting. Decorate as you wish.

Enhance the flavor with almond extract.
Make buttermilk with milk and lemon juice or vinegar.
Adjust the food coloring until you get the desired purple intensity.For a different look, try baking it in a pan by drizzling it with glaze.
