Herb and Seed Bread Dough Recipe

 

 

 

Ingredients:

  • 3 1/2 cups all-purpose or bread flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 cups warm water (110°F/45°C)
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp dried oregano or Italian seasoning
  • 1 tsp dried basil
  • 2 tbsp mixed seeds (sesame, flaxseed, or chia seeds)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Mix the Dough:
    • In a large mixing bowl, combine flour, salt, dried herbs, and seeds.
    • Add the yeast mixture and olive oil. Mix until the dough comes together.
  3. Knead the Dough:
    • Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
    • Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
  4. First Rise:
    • Place the dough in a lightly oiled bowl, turning it to coat. Cover with a damp towel or plastic wrap.
    • Let it rise in a warm place for 1-2 hours, or until it doubles in size.
  5. Shape the Dough:
    • Punch down the dough and shape it as desired: a loaf, rolls, or flatbread.
  6. Second Rise:
    • Let the shaped dough rise again for 30-40 minutes.
  7. Bake:
    • Preheat your oven to 375°F (190°C).
    • Bake for 20-25 minutes (for rolls or flatbreads) or 30-35 minutes (for a loaf) until golden brown and hollow-sounding when tapped.
  8. Cool and Serve:
    • Let the bread cool slightly before slicing. Serve warm or at room temperature.
