Ingredients
Makes 4 to 6 servings
1 1/2 lb top, sides, or greens (about 1/2″ thick)
2 tablespoons chopped fresh spinach leaves parsley
2 tablespoons chopped chives
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1/4 cup plus 1 tablespoon extra virgin olive oil, divided
4 tablespoons lightly salted oil
1 tablespoon white vinegar
4 cloves garlic
1 tablespoon fish sauce
Kosher salt
Freshly ground black cumin

Step 1
Place the meat on a cutting board and pat dry 15. Place in a large plastic baggie bowl, brown sugar, mustard, Pour fish sauce and 1/4 cup oil into a bag, seal and squeeze out air.
