Mexican Tortilla Casserole
Mexican Tortilla Casserole is an easy-to-prepare vegetarian meal that’s perfect for weeknight meals or gatherings with friends.
Ingredients
1 lb. ground beef
1/2 cup chopped onions
1 package taco seasoning mix
2 cups shredded cheddar cheese
1 can refried beans (they spread easier if you microwave them)
1 cup prepared rice (I used minute rice )
1 can Only about half a can is enough for the Mexican corn mixture (ESCURIDO)
4-5 large flour tortillas
8 ounces of chunky, thick salsa (mild or hot of your choice)

1 can of Mexican corn mix (ESCURIDO) makes enough for about 1/2 can
4-5 large flour tortillas
8 ounces thick thick salsa (your choice of mild or hot)
How to make a Mexican tortilla casserole makes

Spray a cake pan, a round pan or a baking dish with cooking spray.
Fry the ground beef and onions and drain.
Add taco seasoning and cook according to package directions.
1 Place a tortilla on the bottom of a baking dish and spread 1/3 of the beans on top, place 1/3 of the meat on top and sprinkle with a little cheese.
2nd layer tortilla, 1/2 rice, 1/2 sauce, 1/2 corn and cheese
3rd layer tortilla, 1/3 beans, 1/3 meat, cheese
4-layer tortilla.Beans, meat, corn, rice, salsa and cheese
Bake covered with foil at 350 for about 40 minutes, uncover and bake for another 10-15 minutes. Let rest for 5 minutes before cutting. After baking, top with sour cream, chopped onions and grated lettuce if desired.
